  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté diced onion for about 3-4 minutes until softened; add minced garlic and cook for an additional minute.
  2. Transfer the onion-garlic mixture to the slow cooker. Place chicken on top and sprinkle with thyme, rosemary, lemon zest, salt, and pepper.
  3. Add uncooked rice around the chicken. Pour in the chicken broth and drizzle fresh lemon juice over everything.
  4. Cover and cook on low for 3-4 hours or high for 1.5-2 hours until chicken is cooked through and rice is tender.
  5. Remove the chicken, stir in frozen peas, shred or slice the chicken, return it to the slow cooker, and mix well before serving.
