Ingredients

Scale
  • 1/2 cup whole milk
  • 1/2 cup water
  • 2 tsp dry active yeast
  • 410 grams bread flour (2 1/2 cups + 3 tbsp)
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp unsalted butter (melted)
  • For baking solution: 2 cups warm water + 2 tbsp baking soda
  • Topping: 6 tbsp melted unsalted butter + coarse pretzel salt

Instructions

  1. In a large mixing bowl, combine warm water and milk. Sprinkle yeast over the mixture and let sit for about 5 minutes until frothy.
  2. Add melted butter, brown sugar, salt, and baking powder. Gradually mix in bread flour until fully incorporated and knead on a floured surface until smooth.
  3. Place dough in a greased bowl, cover, and let rise in a warm area for about 1 hour or until doubled in size.
  4. Preheat oven to 425°F (220°C). Divide dough into eight equal pieces and shape into pretzels.
  5. Bring water to a gentle boil in a saucepan; stir in baking soda until dissolved. Dip each pretzel into the boiling solution for about 30 seconds.
  6. Place on parchment-lined baking sheets, brush with melted butter, sprinkle with salt, and bake for 12-15 minutes until golden brown.
