  • 3 tablespoons extra virgin olive oil
  • 1 cup all-purpose flour
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Olive oil (for brushing)
  • Sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine sourdough discard, olive oil, flour, parmesan cheese, rosemary, salt, and black pepper. Knead gently until well mixed; add more flour if sticky.
  2. Wrap dough in plastic wrap and refrigerate for up to 24 hours or roll out immediately.
  3. Preheat oven to 350°F (175°C). Roll out dough between two sheets of parchment paper to about 1/16 inch thick.
  4. Remove top parchment and cut into desired shapes. Prick holes using a fork to ensure crispness.
  5. Brush with olive oil and sprinkle sea salt on top before placing them in the oven.
  6. Bake for about 30 minutes until golden and crispy, rotating halfway through for even browning.
  7. Cool completely on a wire rack before storing in an airtight container.
