  • ½ cup evaporated milk
  • ½ cup unsalted butter (softened)
  • ½ cup white sugar
  • ½ cup brown sugar (light or dark)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • Pinch salt
  • 1 frozen deep dish pie crust (9 inch)

Instructions

  1. Preheat oven to 400°F (200°C). Wrap sweet potatoes in foil and bake for about one hour until soft.
  2. Reduce oven temperature to 350°F (175°C). Blind bake the frozen pie crust until slightly golden as per package instructions.
  3. Once sweet potatoes are baked, peel them and mash with a hand mixer until smooth. Mix in softened butter until blended.
  4. Add white sugar, brown sugar, spices, and salt; mix well. Incorporate vanilla extract, evaporated milk, and eggs until smooth.
  5. Pour filling into prepared crust and bake for approximately one hour or until set.
  6. Cool completely on a rack before serving. Optionally top with whipped cream.
