  • 1 cup full-fat plain Greek yogurt
  • 2 tbsp lime juice
  • ¾ cup black beans
  • ½ cup finely diced red bell pepper
  • ½ cup corn (preferably fire-roasted)

  • ¼ cup chopped cilantro
  • kosher salt & black pepper (to taste)
  • ¾ tsp ground cumin
  • ¾ tsp chili powder
  • ¾ tsp smoked paprika
  • cayenne (optional, to taste)

Instructions

  1. In a medium pot, season chicken breasts with salt and pepper; cover with water and bring to a boil. Simmer covered for 15-20 minutes until cooked through.
  2. Shred the cooked chicken in a large bowl using forks or a stand mixer.
  3. In another bowl, whisk together Greek yogurt, lime juice, and spices. Fold in shredded chicken along with black beans, bell pepper, corn, onion, and cilantro.
  4. Chill before serving to enhance flavors.
