  • 4 cucumbers
  • 3/4 tsp cooking/kosher salt
  • 1 eschalot (shallot), thinly sliced
  • 1 cup green onions, finely sliced
  • 2 tbsp chili crisp (crispy chili oil)
  • 2 tsp white sesame seeds (toasted)
  • 1 1/2 tbsp rice vinegar
  • 2 tsp soy sauce
  • 2 tsp sesame oil (toasted)

Instructions

  1. Smash the cucumbers using a meat mallet or rolling pin until they burst open. Cut into 2.5cm pieces.
  2. Toss the smashed cucumbers with salt in a bowl and let them sit for 30 minutes to draw out excess water.
  3. In another bowl, whisk together chili crisp, rice vinegar, soy sauce, sesame oil, and toasted sesame seeds.
  4. After draining any salty water from the cucumbers, combine them with green onions, eschalots, and the dressing. Mix gently until combined.
  5. Serve immediately topped with additional sesame seeds and chili crisp if desired.
