  • 250 g cottage cheese
  • 3 eggs
  • 200 g frozen spinach (defrosted)
  • 1 cup grated cheddar cheese
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200 degrees Celsius (400 F).
  2. Line the bottom of a loaf tin with one sheet of puff pastry.
  3. In a food processor, blend cottage cheese, eggs, defrosted spinach, grated cheddar cheese, and seasoning until smooth.
  4. Pour the filling into the prepared pastry base and spread evenly.
  5. Cover with another layer of puff pastry; you can create designs if desired.
  6. Optionally glaze the pastry with an egg wash or milk for shine.
  7. Bake for approximately 35 minutes or until golden brown and flaky.
  8. Allow to cool for at least 15 minutes before slicing and serving.
