  • 2 cooked chicken breasts, chopped
  • 1 cup peas, sliced
  • 1 cup asparagus, sliced
  • 2 tbsp red onion, diced
  • 3 cups torn baguette
  • 1/2 cup crumbled feta cheese

Instructions

  1. In a large salad bowl, combine spring mix, chopped chicken, peas, asparagus, red onion, and feta.
  2. Heat olive oil in a frying pan over medium heat. Add torn baguette pieces and toast until golden brown (4-5 minutes). Let cool slightly before adding to the salad.
  3. For the vinaigrette, mix minced garlic, lemon juice and zest, black pepper, Dijon mustard, honey, chili flakes, olive oil, and salt in a mason jar. Shake well to combine.
  4. Drizzle dressing over the salad and toss gently until all ingredients are coated. Serve immediately.
