  • 1/2 cup peanut butter (or any nut/seed butter of choice)
  • 2 large ripe bananas (mashed)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup strawberries (chopped)

Instructions

  1. Preheat your oven to 180C/350F. Line an 8 x 8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, mashed bananas, peanut butter, and vanilla extract. Stir until well mixed.
  3. Gently fold in chopped strawberries.
  4. Pour the mixture into the prepared pan and spread evenly. If desired, top with additional strawberries or chocolate chips.
  5. Bake for 20-25 minutes until the edges are golden brown and a skewer comes out clean when inserted into the center.
  6. Allow bars to cool in the pan for at least 10 minutes before transferring to a wire rack. Cool completely before slicing into nine squares.
