  • 1.5 ounces freeze-dried strawberries (or 1 cup fresh strawberries, chopped)
  • 1/4 cup water (for rehydrating strawberries)
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • A pinch of salt
  • 4 ounces cold butter, cubed
  • 3/4 cup buttermilk
  • Cream (for brushing on top)

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Rehydrate freeze-dried strawberries by gently squeezing the bag and mixing with water. If using fresh strawberries, chop them and set aside.
  3. In a food processor, blend flour, sugar, baking powder, salt, and cold butter until mixture resembles coarse crumbs.
  4. Gradually add buttermilk while pulsing until just combined.
  5. Turn dough onto a floured surface and knead gently until it holds together.
  6. Remove excess moisture from strawberries and fold into the dough.
  7. Shape dough into a round about 1 inch thick and cut into 8 equal pieces.
  8. Brush tops with cream before baking for a golden finish.
  9. Bake for 14–17 minutes until golden brown.
