  • 4 boneless, skinless chicken thighs
  • 1 tablespoon lime juice
  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup sweet corn kernels
  • 1/4 cup thinly sliced red onion (optional)
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1/2 cup crumbled feta cheese
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste
  • Lime wedges
  • 3 cups cooked jasmine rice
  • Fresh cilantro, chopped (optional)

Instructions

  1. Marinate chicken thighs with lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper for at least 15 minutes.
  2. Cook marinated chicken in a grill pan over medium-high heat for 6–7 minutes per side until fully cooked.
  3. Mix corn with red onion (if using), sour cream, mayonnaise, cheese, chili powder, salt, and pepper in a separate bowl.
  4. Serve by placing cooked jasmine rice in bowls topped with sliced chicken and corn mixture.
