  • 1 cup sweet chili sauce
  • 1/4 cup soy sauce (or gluten-free tamari)
  • 3 tablespoons honey
  • Juice of 2 limes
  • 2 chicken breasts (halved)
  • 350 g rice noodles (or soba/linguine)
  • 1 tablespoon olive oil
  • 3 green onions for garnish

Instructions

  1. In a bowl, mix sweet chili sauce, soy sauce, honey, ground ginger, and lime juice to create the marinade. Reserve 1/2 cup.
  2. Marinate chicken cutlets in remaining marinade for at least 30 minutes.
  3. Heat olive oil in a skillet over medium heat and cook the marinated chicken for about 5 minutes on each side until fully cooked.
  4. Boil water in a pot and prepare rice noodles according to package instructions. Drain and toss with reserved marinade over low heat.
  5. Mix cornstarch with water to create a slurry and stir into the noodles until thickened.
  6. Serve noodles topped with sliced chicken and garnished with green onions and lime wedges.
