  • 1/2 cup mashed sweet potato
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Prepare the sweet potato by piercing it with a fork and microwaving for 5–7 minutes or roasting at 400°F for about 45–60 minutes until soft. Scoop out and mash until smooth.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add in the egg, vanilla extract, and mashed sweet potato; mix until well combined.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Scoop tablespoon-sized portions onto a parchment-lined baking sheet and bake at 350°F for 10–12 minutes until edges are golden brown.
  6. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
