  • 1 pound ground beef (or turkey, chicken, or black beans)
  • 2 tablespoons taco seasoning
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1/2 cup sour cream (or Greek yogurt)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking sheet.
  2. Roast for 25–30 minutes until tender and caramelized, stirring halfway through.
  3. While the potatoes roast, heat a skillet over medium heat and cook the ground beef (or alternative) until browned. Stir in taco seasoning.
  4. Assemble your bowls by layering roasted sweet potatoes at the bottom, followed by seasoned protein or beans.
