  • 2 lbs chicken thighs or breasts (cut into 1-inch cubes)
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic (minced)
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger (minced)
  • 1 tbsp honey
  • 1/2 tsp sesame oil

Instructions

  1. Prepare the teriyaki sauce by combining cornstarch and water in a small bowl. In a medium saucepan, mix the remaining ingredients with the cornstarch mixture. Stir frequently until simmering and slightly thickened; let cool.
  2. Marinate chicken by placing it in a Ziplock bag with half of the cooled sauce. Seal and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium heat and thread marinated chicken onto skewers.
  4. Grill skewers for about 20-30 minutes, turning every 3-4 minutes until cooked through (165°F internal temperature). Baste with remaining sauce during the last few minutes.
  5. Serve hot garnished with chopped green onions and sesame seeds.
