  • 6 oz pineapple juice
  • 1 1/2 tablespoon fresh ginger (finely chopped)
  • 1 1/2 tablespoon soy sauce
  • 35 garlic cloves (finely chopped)
  • 2 tablespoon sesame oil
  • 1 tablespoon light brown sugar
  • 1 teaspoon Kosher salt + black pepper (to taste)
  • green onion (sliced)

Instructions

  1. In a mixing bowl, combine pineapple juice, fresh ginger, soy sauce, chopped garlic, sesame oil, brown sugar, Kosher salt, and black pepper. Mix well and reserve ½ cup of the marinade.
  2. Add chicken thighs to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 6 hours or overnight.
  3. Preheat your oven to 400°F (200°C). Place marinated chicken in a baking dish skin side down and bake for 20 minutes.
  4. Flip chicken thighs over, pour reserved marinade on top, and bake for an additional 15 minutes until cooked through. Broil on high for about 5 minutes for crispy skin.
  5. Garnish with sliced green onion before serving.
