  • 4 1/25 cups all purpose unbleached flour
  • 1/2 cup butter (softened or margarine)
  • 1 1/4 cups packed light brown sugar
  • 2 1/2 tablespoons ground cinnamon
  • 2 tablespoons cornstarch
  • 2 oz. cream cheese (at room temperature)
  • 1/4 cup butter (softened or margarine)
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon corn syrup
  • 1 teaspoon fresh lemon juice
  • 1 1/4 cups powdered sugar

Instructions

  1. In a stand mixer bowl, combine warm water and yeast with 1 tablespoon of sugar; let proof for 5 minutes until bubbly.
  2. Mix in remaining sugar along with buttermilk, oil, and egg. Gradually add flour and salt until you achieve a tacky dough.
  3. Knead for 5 minutes until smooth and elastic. Let rise covered in a greased bowl for 1-2 hours until doubled.
  4. Roll out dough into a rectangle and spread softened butter over it. Sprinkle with the cinnamon filling mixture.
  5. Roll tightly and cut into sections; place on parchment-lined pans to rise again until nearly doubled.
  6. Bake at 350°F (175°C) for 17-20 minutes until golden brown. Prepare frosting while baking.
  7. Frost warm rolls immediately after removing from the oven.
