  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, instant espresso powder, baking powder, baking soda, and salt. Whisk these together until well combined.
  3. In another bowl, use your stand mixer or hand mixer to cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the creamed mixture and mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined; do not overmix.
  6. Scoop large portions of dough onto your prepared baking sheet, spacing them evenly. Bake for about 12 minutes or until the edges are golden.
  7. Once baked, allow the cookies to cool on the sheet for a few minutes before transferring them to a cooling rack.
  8. While cookies cool, whip together mascarpone cheese, whipping cream, powdered sugar, and vanilla extract until smooth and creamy.
  9. Once cookies have cooled completely, top each with a generous dollop of the mascarpone mixture and dust with cocoa powder before serving.
