  • 1/4 cup fine almond flour
  • 1 teaspoon baking powder
  • 12 teaspoons ceremonial grade matcha powder

Instructions

  1. Preheat your oven to 350F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine tahini, maple syrup, and vanilla extract; whisk until smooth.
  3. Sift in oat flour, almond flour, and baking powder; mix until a dough forms. Adjust with more oat flour if sticky.
  4. Set aside one-third of the dough; add matcha powder to the remaining dough and mix well.
  5. Shape tablespoon-sized matcha dough into cookie shapes and form small pieces from plain dough for heads, tails, and legs.
  6. Press together to shape turtles and add decorative details; bake for 8-10 minutes.
