  • 1 1/2 cups chopped yellow onion
  • 2 cups peeled and chopped carrots
  • 1 1/4 cups chopped celery
  • 4 cloves garlic, minced
  • 4 cans low-sodium chicken broth or vegetable broth
  • 2 cans diced tomatoes (undrained)
  • 3 cups diced potatoes
  • 1/3 cup chopped fresh parsley
  • 2 bay leaves
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 1/2 cups green beans
  • 1 1/4 cups corn
  • 1 cup peas

Instructions

  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Add onions, carrots, and celery; sauté for about 4 minutes until soft. Stir in garlic and cook for an additional 30 seconds.
  3. Pour in broth, diced tomatoes, potatoes, parsley, bay leaves, thyme, salt, and pepper; mix well.
  4. Bring the mixture to a boil; add green beans.
  5. Reduce heat to medium-low and cover; simmer for about 20-30 minutes until potatoes are tender.
  6. Stir in corn and peas; cook for an additional 5 minutes. Serve warm.
