  • 2 Tbsp olive oil
  • 1 1/2 cups chopped yellow onion
  • 2 cups chopped carrots
  • 1 1/4 cups chopped celery
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cans diced tomatoes (undrained)
  • 3 cups diced potatoes
  • Fresh parsley
  • 2 bay leaves
  • Thyme
  • Salt and pepper
  • 1 1/2 cups green beans
  • 1 1/4 cups corn
  • 1 cup peas

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté onions, carrots, and celery for about 4 minutes; add garlic and sauté an additional 30 seconds.
  3. Stir in broth, diced tomatoes, potatoes, parsley, bay leaves, thyme, salt, and pepper.
  4. Bring to a boil; add green beans once boiling.
  5. Reduce heat to medium-low and simmer for about 20-30 minutes until potatoes are almost tender.
  6. Add corn and peas; cook for another 5 minutes until heated through. Serve warm.
