  • 1 lb ground beef
  • 1 small onion (finely chopped)
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 can diced tomatoes with green chiles (10 oz)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 oz)
  • 2 cups Mexican-style shredded cheese

Instructions

  1. Preheat your oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef until nearly cooked through. Add finely chopped onions and cook until soft.
  3. Stir in taco seasoning and water; bring to a boil. Reduce heat, add black beans, diced tomatoes, and sour cream; cook for 8-10 minutes until heated through.
  4. Layer corn chips at the bottom of the prepared baking dish, followed by one cup of shredded cheese and half of the beef mixture. Top with remaining cheese.
  5. Cover with foil and bake for 15 minutes; remove foil and bake for an additional 5 minutes until cheese is melted.
