  • 2 large eggs

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup crushed candy canes
  • 1¼ cup white chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (180°C) and line cookie sheets with parchment paper.
  2. In a large bowl, cream together softened butter, shortening, white sugar, and brown sugar until fluffy (about 2 minutes).
  3. Add vanilla and peppermint extracts, then mix in eggs one at a time until fully incorporated.
  4. Gradually combine flour, baking soda, and salt at low speed; adjust flour as needed for consistency.
  5. Fold in crushed candy canes and 1 cup of white chocolate chips until just combined.
  6. Scoop dough into balls (1 – 1½ tablespoons each) on lined sheets, spacing 2 inches apart.
  7. Bake for 8-10 minutes or until tops are set; press remaining chocolate chips on top after removing from the oven.
  8. Allow cookies to cool on the baking sheet for about 10 minutes before transferring to a wire rack.
