  • 1 lb chicken sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 oz) can of white beans, drained and rinsed
  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 8 oz lasagna noodles, broken into pieces
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the chicken sausage until browned. Use a wooden spoon to break it apart as it cooks. Remove from pot and set aside.
  2. In the same pot, sauté the chopped onion and minced garlic until softened (about 3 minutes).
  3. Add the chicken broth and white beans; bring to a boil, then reduce heat to simmer.
  4. Stir in the heavy cream, spinach, ricotta cheese, mozzarella cheese, and Parmesan cheese. Let it simmer for about 5 minutes while stirring occasionally.
  5. Add broken lasagna noodles directly into the soup and cook until tender (approximately 10 minutes).
  6. Return the cooked sausage to the pot and cook for an additional 5 minutes. Season with salt and pepper to taste.
  7. Serve hot with extra grated Parmesan cheese on top.
