  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 68 whole pepperoncini peppers
  • 12 tbsp pepperoncini pepper juice
  • 4 tbsp ghee

Instructions

  1. Prepare the chuck roast by patting it dry and seasoning with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 1-2 minutes on each side until golden brown.
  3. Transfer the roast to a slow cooker. Deglaze the skillet with beef broth, scraping up brown bits, then pour over the roast.
  4. Sprinkle chives, garlic powder, onion powder, dill, salt, and black pepper over the meat. Add whole pepperoncini and juice; top with ghee.
  5. Cover and cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
