  • 1½ cups cooked cannellini or butter beans
  • ½ cup uncooked quinoa
  • 2 medium carrots, diced
  • 1 cup celery, diced
  • 1 cup red onion, diced
  • 34 cloves garlic, minced
  • 1 cup celeriac, cubed
  • 1 medium sweet potato, diced
  • 2 cups chopped fresh kale
  • 8 cups vegetable or chicken stock
  • Sea salt and pepper to taste

Instructions

  1. If using dry beans, soak overnight or quick-soak by boiling for 3 minutes and letting sit for an hour. Drain.
  2. In a large pot, combine soaked beans with stock and simmer with aromatics (onion, garlic, carrot, celery) for about 45 minutes to 1½ hours until tender.
  3. In a skillet, heat olive oil and sauté carrots, celery, red onion, garlic, bay leaves, and thyme until softened (about 8 minutes). Transfer to the pot with beans.
  4. Add celeriac, sweet potatoes, canned tomatoes (with juice), and quinoa; bring to a boil then reduce heat and simmer for about 20 minutes.
  5. Stir in chopped kale and cook for another 5-8 minutes until wilted. Season with salt and pepper before serving hot.
