  • 3 medium zucchini
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 6 oz whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 10 oz no-sugar-added tomato sauce
  • 1/2 tbsp balsamic vinegar
  • 1 clove garlic (finely minced)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. Slice zucchini lengthwise into thin sheets using a mandoline. Roast on the baking sheet after brushing with olive oil and seasoning.
  3. Mix tomato sauce with olive oil, balsamic vinegar, Italian seasoning, and minced garlic in a bowl.
  4. In another bowl, combine ricotta cheese, Parmesan cheese, egg, and Italian seasoning until smooth.
  5. Spread ricotta mixture onto each zucchini slice, add mozzarella, roll tightly, and place in a casserole dish topped with sauce and remaining cheese.
  6. Bake for 10 minutes until the cheese melts.
