  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced

  • 1 cup heavy whipping cream
  • Salt and pepper to taste

Instructions

  1. In a large stockpot over medium-high heat, cook the ground spicy Italian sausage until browned. Use a slotted spoon to transfer the sausage to a plate and reserve some grease in the pot.
  2. Add diced onions to the pot and sauté for about 5 minutes. Then add minced garlic and sauté for another minute.

  4. Reduce heat and let simmer for about 10 minutes until potatoes are tender.
  5. Add chopped kale and heavy whipping cream; simmer for an additional 5 minutes. Season with salt and pepper.
