  • 1/3 cup lime juice
  • 12 corn or flour tortillas
  • 2 cups grilled or steamed corn
  • 1 large avocado
  • 1 cup raw unsalted cashews
  • 2 tablespoons honey
  • 3 cloves garlic (minced)
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ jalapeno (seeded and minced)
  • ¼ cup finely diced red onion
  • Juice from 1 lime (about 2 tablespoons)
  • 2 tablespoons olive oil (for salsa)
  • ½ cup finely chopped cilantro
  • ¼ teaspoon cumin (for salsa)
  • 1 teaspoon kosher salt (for salsa)
  • 2/3 cup fresh cold water
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt (for crema)

Instructions

  1. Marinate the beef: Mix olive oil, lime juice, honey, garlic, and spices in a bowl. Add sliced beef and coat well. Marinate for at least 20 minutes.
  2. Prepare salsa: In a bowl, combine diced jalapeño, onion, avocado, garlic, lime juice, olive oil, cilantro, cumin, and salt. Mix and refrigerate.
  3. Make cashew crema: Soak cashews in water. Drain and blend with cold water, garlic, onion powder, lime juice, and salt until smooth.
  4. Cook the beef: Heat olive oil in a skillet over medium-high heat. Sear marinated beef slices for 2-3 minutes on each side until cooked through.
  5. Assemble tacos: Warm tortillas and fill them with beef slices. Top with corn salsa and drizzle with cashew crema.
