  • 6 salmon fillets (skin-on, 6oz each)
  • 1 tablespoon paprika
  • 3 tablespoons olive oil (divided)
  • ½ cup sour cream (or dairy-free alternative)
  • ¼ cup mayonnaise
  • 3 tablespoons fresh dill (chopped)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon lemon juice
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon chipotle pepper

Instructions

  1. Preheat your oven to 400°F. Pat the salmon fillets dry with paper towels.
  2. In a small bowl, mix paprika, onion powder, garlic powder, oregano, thyme, salt, black pepper, cayenne pepper, and chipotle pepper.
  3. Rub the seasoning blend over the salmon fillets and drizzle with olive oil.
  4. Heat a cast iron skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the salmon skin-side up for about 1-3 minutes until charred.
  5. Flip the salmon to skin-side down and transfer the skillet to the oven. Bake for 10-14 minutes until cooked through.
  6. For the dill sauce: In another bowl, combine sour cream, mayo, dill, garlic, lemon juice, salt, and black pepper; mix well.
  7. Serve the salmon hot with dill sauce drizzled on top.
