  • 4 cloves garlic, minced
  • 1 1/2 lb ground beef (or turkey)
  • 1 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 4 cups cauliflower rice (or cooked white rice)
  • 2 tbsp Italian seasoning
  • 3/4 head cabbage, chopped (~6 cups)
  • 3 cups marinara sauce
  • Optional: 3 cups shredded mozzarella cheese (omit for dairy-free)

Instructions

  1. Heat avocado oil in a large sauté pan over medium heat and add minced garlic. Cook for about one minute until fragrant.
  2. Increase the heat to medium-high, add ground beef, season with salt and pepper, and cook until browned (approximately 10 minutes). Drain excess fat if necessary.
  3. Preheat your oven to 350°F (177°C).
  4. In a 9×13 inch baking dish, combine cauliflower rice, chopped cabbage, and Italian seasoning.
  5. Stir in the cooked ground beef and marinara sauce.
  6. Bake for about 30 minutes until the cabbage is crisp-tender.
  7. If desired, top with shredded mozzarella cheese and bake an additional 15 minutes until golden brown.
