  • 2 tablespoons olive oil
  • 8 cups cabbage (cut into 1” pieces)
  • 2 teaspoons salt (divided)
  • 1 pound ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 14.5 ounces diced tomatoes (1 can)
  • 8 ounces tomato sauce (1 can)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon black pepper
  • 2 cups white rice (cooked)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Cook 2 cups of white rice according to package instructions and set aside.
  2. Preheat your oven to 350°F and grease a 9×13-inch casserole dish.
  3. In a large skillet, heat olive oil over medium heat. Sauté chopped cabbage with 1 teaspoon of salt until tender, about 8 minutes. Transfer to a bowl.
  4. In the same skillet, brown the ground beef over medium-high heat for 5 minutes. Add diced onion and minced garlic; cook until onion is tender.
  5. Stir in diced tomatoes, tomato sauce, Italian seasoning, black pepper, and remaining salt; mix well.
  6. Combine cooked rice and sautéed cabbage with the meat mixture; stir to combine.
  7. Pour the mixture into the prepared baking dish and top with shredded cheese.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
