  • 3 cups Beef Broth
  • 1 tbsp Tomato Paste
  • 2 small Yellow Onions, diced
  • 1 head Cabbage, chopped
  • 1 cup Tomatoes, diced
  • 3 stalks Celery, sliced
  • 1 Red bell pepper, diced
  • 1 Yellow bell pepper, diced
  • 1 Orange bell pepper, diced
  • 3 tsp Garlic, minced
  • 1 tsp Fresh Thyme
  • 2 tbsp Olive Oil

Instructions

  1. In a large Dutch oven, heat the olive oil over medium heat until shimmering.
  2. Sauté the onions and all bell peppers with tomatoes for 4 to 6 minutes until softened.
  3. Mix in garlic, thyme, salt, pepper (if desired), and tomato paste; stir well.
  4. Add beef broth and chopped cabbage; bring to a boil.
  5. Reduce heat to low and simmer for 15 to 20 minutes until vegetables are tender.
