  • 1/2 cup chopped onion
  • 2 cloves garlic (minced)
  • 1/2 cup chopped celery
  • 2 medium carrots (peeled and sliced)
  • 1 small head of cabbage (cored and chopped)
  • 4 cups reduced sodium chicken broth
  • 10 ounces Yukon gold potatoes (peeled and diced)
  • 1 leftover chicken bone
  • 5 ounces chopped leftover chicken

Instructions

  1. Gather all ingredients and chop vegetables.
  2. In an Instant Pot, sauté onions, celery, and garlic with cooking spray for 4-5 minutes until softened.
  3. Add broth, carrots, potatoes, chicken bone, and chopped chicken; pour in additional water.
  4. Seal the lid and cook on high pressure for 20 minutes; let steam release naturally.
  5. Carefully add cabbage and cook on high pressure for another 5 minutes.
