  • 1 pound lean ground beef
  • 4 large napa cabbage leaves (minced)
  • 6 stalks green onion (minced)
  • 7 shiitake mushrooms (minced; if dried – rehydrated and rinsed)
  • 1/2 cup minced bok choy
  • 1/2 cup minced bamboo shoots
  • 2 garlic cloves (minced)
  • 3 tablespoons minced fresh ginger
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons corn starch
  • 1 tablespoon sesame oil
  • 2 teaspoons sriracha (optional)
  • 36 wonton wrappers
  • 2 tablespoons vegetable oil
  • Water (as needed)
  • Low sodium soy sauce (for serving)
  • Green onions (optional garnish)

Instructions

  1. In a mixing bowl, combine ground beef, minced napa cabbage, green onion, shiitake mushrooms, bok choy, garlic, ginger, soy sauce, corn starch, sesame oil, and sriracha. Mix well.
  2. Place about 1 tablespoon of filling onto the center of each wonton wrapper. Moisten edges with water and fold to seal tightly.
  3. Heat vegetable oil in a wok over medium-high heat. Cook dumplings in batches until bottoms are golden brown.
  4. Add water to cover the bottom of the skillet and cover immediately. Steam for about 5-7 minutes until cooked through.
  5. Serve warm with soy sauce on the side for dipping.
