  • 16 ounces full-fat cream cheese (softened)
  • 1 + 3/4 cups shredded sharp white cheddar cheese
  • 2 tablespoons chopped fresh green onions (divided)
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup dried cranberries (finely chopped, divided)
  • 3/4 cup pecans (finely chopped, divided)

Instructions

  1. In a stand mixer fitted with a paddle attachment, beat softened cream cheese until smooth. Mix in shredded cheddar cheese, half of the green onions, brown sugar, garlic powder, salt, black pepper, half of the cranberries, and half of the pecans until well combined.
  2. Use a silicone spatula to scrape down the bowl sides and form the mixture into a ball shape. If sticky, lightly grease hands with butter or oil.
  3. For coating, mix remaining cranberries, pecans, and green onions in a small bowl. Roll the cheese ball in this mixture until fully coated.
  4. Wrap tightly in plastic wrap and refrigerate for at least two hours or up to five days. Serve at room temperature with crackers or veggies.
