  • 68 skinless chicken thighs
  • 3 tablespoons dry ranch seasoning
  • 8 tablespoons butter
  • 1/2 16 ounce jar whole pepperoncini peppers with juice
  • 1 teaspoon red chili flakes
  • 2 packages Hawaiian dinner rolls, sliced in half horizontally
  • 1/2 cup mayonnaise
  • 1/4 cup spicy mustard
  • 24 slices Gouda cheese
  • 3 tablespoons butter
  • 1 tablespoon dry ranch seasoning
  • 1 tablespoon dried parsley

Instructions

  1. Place chicken thighs in the slow cooker; sprinkle ranch seasoning over them.
  2. Add pepperoncini peppers and their juice along with red chili flakes.
  3. Cut butter into pieces and scatter over the chicken.
  4. Cook on low for 6-7 hours or high for 4 hours until tender.
  5. Shred the chicken directly in the slow cooker and mix well.
  6. Preheat oven to 350°F (175°C). Spread mayonnaise and spicy mustard on Hawaiian rolls.
  7. Layer Gouda cheese on the bottom halves of rolls, top with shredded chicken, add another slice of cheese, then cover with the top half of rolls.
  8. Brush melted butter on top and bake for about 15 minutes until golden brown.
