  • 34 lbs organic chicken, skin removed
  • 1 tsp smoked paprika
  • 2 tsps Lawry's seasoning salt
  • 1 tsp black pepper
  • 1/4 cup organic all-purpose flour
  • 4 Tbsps unsalted butter
  • 2 Tbsps extra virgin olive oil
  • 2 cups organic chicken stock
  • 1 cup organic heavy cream
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 2 fresh thyme sprigs

Instructions

  1. Season the chicken with smoked paprika, seasoning salt, black pepper, and garlic powder.
  2. In a cast iron skillet over medium-high heat, melt olive oil and butter. Brown the chicken on all sides (about 5 minutes per side) and set aside.
  3. Sauté chopped onion until translucent, then add minced garlic and thyme.
  4. Stir in flour to combine, then gradually whisk in chicken stock until slightly thickened.
