  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1620 frozen veggie dumplings
  • 2 bok choy bulbs
  • 1 zucchini

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, and whisk until smooth.
  3. Grate in garlic and ginger; mix well.
  4. Chop bok choy and slice zucchini; add to the broth mixture.
