  • 3 pounds Russet potatoes (peeled & diced)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/4 cup butter (melted)
  • 2 cups grated sharp cheddar cheese (divided)
  • 1 cup freshly grated parmesan cheese (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 casserole dish.
  2. Boil the diced potatoes in salted water until tender (about 15-20 minutes). Drain thoroughly.
  3. In a mixing bowl, combine the condensed soup, sour cream, melted butter, half of each cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Place the boiled potatoes in the casserole dish and pour the mixture over them. Toss gently to coat evenly.
  5. Sprinkle the remaining cheeses on top and bake uncovered for about 45 minutes or until golden and bubbly.
  6. Let it rest for 5-10 minutes before serving.
