  • 3 green onions
  • 4 cups shredded green cabbage (or slaw mix)
  • 1 carrot (grated or julienned)
  • 1 package ramen noodles (seasoning packet discarded)
  • 3 tablespoons hoisin sauce (or teriyaki sauce, plus additional for serving)
  • 1 ½ tablespoons soy sauce
  • 1 ½ teaspoons rice vinegar
  • 1 teaspoon brown sugar
  • ½ teaspoon sriracha (or sambal oelek)
  • ½ teaspoon sesame oil

Instructions

  1. Slice green onions, separating white from green tops. In a bowl, mix hoisin sauce, soy sauce, rice vinegar, brown sugar, sriracha, and sesame oil.
  2. Boil water in a small pot; cook ramen noodles according to package directions, reserving â…“ cup of cooking water before draining.
  3. Heat vegetable oil in a large skillet over medium heat. Add garlic, ginger, and white parts of green onions; sauté until fragrant.
  4. Add shredded cabbage and grated carrot; cook for 3-5 minutes until tender.
  5. Stir in the sauce mixture and cooked ramen noodles. Add reserved noodle water to achieve desired consistency.
  6. Garnish with remaining green onion tops; serve hot.
