  • 1 lb boneless, skinless chicken breasts
  • 1 cup canned pineapple chunks
  • 1/2 cup red bell pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 2 cups cooked jasmine or brown rice

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Cook chicken pieces until browned and fully cooked, about 6–7 minutes. Remove from heat.
  2. In the same skillet, add reserved pineapple juice and sauté pineapple chunks and bell pepper for about 3–4 minutes until softened.
  3. In a mixing bowl, whisk together soy sauce, honey, garlic, ginger, and cornstarch. Pour this into the skillet and stir until thickened (about 2–3 minutes).
  4. Add the chicken back into the skillet, stirring to coat thoroughly. Let it simmer for another minute to meld flavors.
  5. Serve warm over rice and garnish with green onions and sesame seeds if desired.
