  • 2 pounds boneless, skinless chicken thighs (cut into 1-inch chunks)
  • 1/4 cup oyster sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 2 tablespoons chili garlic sauce
  • 3 cloves garlic (minced)
  • 1 tablespoon Dijon mustard
  • 1 1/2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 green onions (thinly sliced)

Instructions

  1. In a medium bowl, mix oyster sauce, ketchup, honey, chili garlic sauce, minced garlic, Dijon mustard, and a tablespoon of water. Reserve 1/3 cup for later.
  2. Marinate chicken thighs in the remaining mixture for at least 2 hours or overnight in a sealed bag or bowl.
  3. Thread marinated chicken onto skewers, brush with canola oil, and season with salt and pepper.
  4. Preheat grill to medium heat. Grill kabobs for about 10 minutes, turning occasionally until cooked through (165°F). Brush with reserved marinade during the last few minutes.
  5. Serve hot garnished with green onions.
