  • 3-pound slab of salmon
  • 14-ounce can of pineapple tidbits or rings
  • 1/4 cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar
  • 1 1/2 tablespoons honey
  • Minced garlic (1-2 cloves)
  • Sea salt
  • Smoked paprika
  • White pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Pat the salmon dry and cut into two pieces.
  3. Line a baking sheet with aluminum foil or parchment paper.
  4. Arrange pineapple on the lined baking sheet and place salmon on top.
  5. In a bowl, mix chopped pineapple, pineapple juice, melted butter, sesame oil, lemon juice, brown sugar, honey, minced garlic, sea salt, smoked paprika, and white pepper.
  6. Spread the marinade over the salmon and let it marinate in the fridge for 15 to 30 minutes.
  7. Bake for 25–30 minutes until the internal temperature reaches 145°F.
  8. Let rest for ten minutes before serving.
