  • 2 teaspoons sesame oil
  • 1 teaspoon ginger paste
  • 1 teaspoon minced garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar (rice vinegar recommended)
  • 12 teaspoons red chili paste
  • 1 teaspoon brown sugar
  • 1/2 cup cabbage (thinly sliced)
  • 1 carrot (peeled and sliced into matchsticks)
  • 1/2 cup bell pepper (thinly sliced)
  • 1/4 cup scallion or green onion (white and green part divided)
  • 1/2 cup broccoli (cut into very small florets)

Instructions

  1. In a mixing bowl, whisk together the sauce ingredients: vegetable broth, sesame oil, ginger paste, minced garlic, soy sauce, vinegar, chili paste, brown sugar, salt, and black pepper.
  2. Add the noodles to the Instant Pot. Pour the prepared sauce over the noodles.
  3. Layer in the cabbage, carrot, and bell pepper on top of the noodles.
  4. Seal the Instant Pot lid and set it to manual high pressure for 4 minutes.
  5. After cooking, perform a quick pressure release and open the lid.
  6. Add broccoli florets and stir gently with tongs to combine. Close the lid for an additional 5 minutes without pressure cooking.
  7. Serve warm with garnishes like chopped scallions and sesame seeds.
