  • 1/2 head of cabbage
  • 1/2 sweet onion
  • 1/2 bell pepper (any color)
  • 68 baby carrots
  • 2 tsp minced garlic
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 1/4 cup water
  • 2 tsp onion powder
  • 1 tsp seasoned salt
  • 2 sprigs fresh thyme (or 1/2 tsp ground thyme)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 Scotch Bonnet pepper (optional)

Instructions

  1. Chop the cabbage and rinse in a strainer.
  2. Dice carrots, onion, and bell pepper; set aside.
  3. Heat olive oil and butter in a large pot over high heat.
  4. Sauté minced garlic until fragrant.
  5. Add diced bell pepper, carrots, and onion; stir for 2–3 minutes.
  6. Incorporate the chopped cabbage along with remaining butter, thyme, onion powder, seasoned salt, black pepper, and paprika.
  7. Pour in water; cover and cook on high for 1–2 minutes before reducing heat to medium-low.
  8. Simmer for an additional 10 minutes or longer based on desired cabbage texture.
  9. Remove thyme sprigs before serving.
