  • 4 boneless, skinless chicken breast halves
  • 3 tablespoons soy sauce (or coconut aminos for gluten-free)
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh cilantro, finely chopped
  • 2 tablespoons red bell pepper, finely chopped

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, vegetable oil, lime juice, minced garlic, cilantro, and red bell pepper until well combined.
  2. Place chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes (up to 2 hours).
  3. Preheat your grill to high heat (or grill pan over medium-high heat).
  4. Remove the chicken from the marinade and discard excess liquid. Grill each breast for 6–8 minutes per side until reaching an internal temperature of 165°F (75°C).
  5. Allow grilled chicken to rest for about 5 minutes before serving.
