  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon fresh jalapeno (minced)
  • Juice from 1/2 lime
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/2 cup cotija cheese (crumbled)
  • 1/3 cup fresh cilantro (diced)

Instructions

  1. Husk the corn and cut each ear into quarters using a sharp chef's knife.
  2. In a mixing bowl, combine mayonnaise, sour cream, minced jalapeno, lime juice, cumin, paprika, chili powder, and salt. Stir until smooth.
  3. Using a basting brush, coat each corn quarter generously with the sauce mixture.
  4. Preheat grill or oven to medium-high heat. Cook the coated corn ribs for about 15 minutes until tender and slightly charred.
  5. Remove from heat and sprinkle with crumbled cotija cheese and diced cilantro before serving.
