  • 1/2 head purple cabbage (shredded)
  • 1 cup shredded carrots (from 12 large carrots or pre-shredded bag from the store)
  • 1/4 red onion (thinly sliced, optional)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice (from 12 limes)
  • 3 tablespoons orange juice
  • 1 tablespoon hot honey (or regular honey + 1/4 teaspoon cayenne pepper)
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt

Instructions

  1. Prepare the vegetables by shredding the green and purple cabbage and carrots. Combine them in a large mixing bowl.
  2. If desired, add thinly sliced red onion and chopped fresh cilantro to the vegetable mix.
  3. In a separate bowl, whisk together olive oil, lime juice, orange juice, hot honey, cumin, and salt until well combined.
  4. Pour the dressing over the shredded vegetables and gently toss until evenly coated.
