  • 2 (8 oz) Cream Cheese, softened
  • 1/3 cup Sugar
  • 2 Eggs
  • 1/2 tsp Peppermint Extract
  • 1/2 cup Sour Cream
  • 1/2 cup Crushed Candy Cane Pieces
  • 16 Oreos, crushed
  • 2 tbsp Butter, melted
  • 1/2 cup Chocolate Chips
  • 1 1/2 tbsp Butter
  • 2 tsp Milk
  • 2 tsp Corn Syrup

Instructions

  1. Preheat your oven to 350°F and line a cupcake pan with liners.
  2. In a food processor, crush Oreos into fine crumbs, then mix with melted butter. Press mixture into each liner.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time. Mix in peppermint extract and sour cream, then fold in crushed candy canes.
  4. Fill each crust with cheesecake mixture and bake for 15-18 minutes until slightly jiggly. Cool completely before refrigerating.
  5. For the ganache, microwave chocolate chips, butter, milk, and corn syrup until smooth. Drizzle over cooled cheesecakes before serving.
